Gâteau Vert




So for months we’d talked about making this recipe and when my nan gave us some Fetta it seemed like the perfect time to do it.
Mum went out and bought a kilo of spinach and some good Parmesan cheese and we were all set to make the dish.
Except we didn’t… And then the Fetta was passed the used by date…
But one day, bored at work I made a card declaring it Green Cake Day and decided that on this day we would finally make the green cake. So we went out and got the Fetta and parsley and we finally made it
For this recipe you will need:
-1kg spinach
-200g Fetta or Ricotta
-100g grated Parmesan
-1 garlic clove
-15ml chopped parsley
-30ml bread crumbs
-1 egg
Instructions:
1. Boil or steam the spinach for 10 mins. In our case the spinach was frozen (four packets of frozen 250g spinach) so we just waited for the spinach to fully defrost.

2. Add the parsley, Fetta (make sure you crumble it first with a fork), garlic (crushed) and some of the Parmesan (about half) to a bowl and mix together. Add the egg and combine.
3. Add spinach to mix.

4. Set oven to 2200C
5. Grease your dish (should be about 22cm in diameter). Fill the dish with the mixture and top with the breadcumbs and remaining Parmesan.

6. Cook for 20 mins and serve hot or cold
